The Power of a Chicken Recipe

Chicken has got to be one of the most universal meats we have today. You can do so much with it, and you get so much from it. Have you got a really terrific chicken recipe that every time your family sits down to the table puts a smile on their face? Most of us do have such a wonderful recipe, for some of us it is fried chicken, and for others it will be our famous chicken soup.

The funny thing about a chicken recipe is that you can take the same recipe and alter a couple of ingredients and have a whole new dish. Or you can take an existing recipe that does not contain any chicken at all, perhaps that famous pasta salad that you make, toss in some cubed chicken and you've got a whole new chicken recipe that will delight your friends and family for years to come. And of course from that one alteration, you can create a whole list of new chicken recipe dishes.

More than likely, if each of us thought about it, we have enough chicken recipes that we have created in our own kitchens to create a whole Chicken Recipe Cook Book! Just think of the sections you could have: Fried Chicken, Baked Chicken, Stewed Chicken, Chicken Soup, Chicken Salads, Chicken Dips, Roasted Chicken, Chicken Casseroles - And this is just touching the surface. Such a cookbook would become famous in most kitchens.

It is a safe bet to say that there is not a woman alive today who does not have some kind of a chicken recipe that is her special pride and joy. In some cases, it will be the thing she offers to cook when her children come home for the holidays. Or maybe in some cases it is this special fried chicken that she makes to coax a son home after too many months away!

With chicken you cannot really go wrong. It is tasty, easy to prepare and most people love chicken. This is probably the reason why chicken recipes are so popular. A chicken recipe can be as healthy or as decadent as you wish. This, of course, mean that chicken is a suitable choice for any occasion.

I think there is just about nothing you cannot do with chicken. Add whatever you have at hand and it is almost certain to be a success. We all know the very popular chicken in red wine, roasting the chicken with cola and even mayonnaise and instant soup. As far as chicken is concerned the old cliché that "anything goes" is really true.

So, without wasting time, let's have a look at a tasty chicken recipe.

Elsie's Easy Chicken In The Oven

This chicken recipe from my personal best recipes cookbook is very easy to prepare. Even though it has to bake in the oven for 1 ½ hour, you can pop it into the oven and carry on with something else, so you really spend very little time on it and it is delicious. Serve this tasty chicken with rice or potatoes and a mixed salad and you have a meal fit for a king.

Ingredients for this recipe:

    2 ½ - 3 lb. Chicken cut into 6 pieces
    1 Cup cream
    3 Teaspoons curry powder
    1 Onion chopped finely
    1 Tin of mushroom soup
    2 Tablespoons butter
    1 Peeled apple chopped finely
    Salt, pepper and paprika to taste

Method for this recipe:

    Melt the butter in a saucepan.
    Sauté the onion, apple and curry powder in the butter until the onion is transparent.
    Add the soup and the cream and heat it through without boiling.
    Salt the chicken to taste.
    In a large, shallow ovenproof dish place the chicken in a single layer.
    Sprinkle the chicken with the paprika.
    Pour the sauce over the chicken.
    Bake uncovered for about 1 ½ hours until done.

The next chicken recipe is really for those days when there is just no time for cooking. Prepare the chicken, pop it in the oven and forget about it until it is done. In this case it is tinfoil that is coming to the rescue. Remember to use the tinfoil with the shiny side on the inside and the matt side on the outside.

Place the chicken (size according to requirements) on a large piece of heavy duty tinfoil. Sprinkle a packet of dehydrated soup all over the chicken. (If it is a very large chicken a little extra soup may be needed.) Any spicy soup will do. Brown onion soup is also very good. Place a peeled onion inside the chicken. Wrap the chicken in the tinfoil and place in a pre-heated oven at 400 degrees Fahrenheit for 2 hours until done.

Serve the chicken as you would any roast chicken. As there is not really a lot of gravy I do not usually serve this chicken with rice but rather with potatoes and vegetables.
